recipe: pink cheesecake


i have been dreaming of making this cheesecake ever since i first laid eyes on it. this perfect summer cake is the genius creation of one of my favorite blogs, green kitchen stories. it is the perfect amount of sweet with only natural sweeteners (the recipe calls for honey, but i was out so i substituted it for maple syrup). it tastes like strawberry sorbet lounging on the perfect crust. the filling would also work perfectly for popsicles.

i made this for dessert saturday night. a pregnant lady was in attendance. i figured she would be appreciate it.

for those of you looking for a healthy dessert, look no further.
