our favorite winter recipe: bison chili


alright folks, this is the end all be all chili. the first time i had this chili at my friend katie's house, i was a convert. chili has never really been my favorite, but this chili is so freaking good that sam and i make it once a week. it's sweet and spicy (if you add the jalapeno, which i always do). heaven in your mouth. you cook it in the crockpot, so it's a perfect sunday dinner (would be great for the superbowl this weekend). without further adieu:

bison chili
1.5 to 2 pounds ground bison (i usually do 1.5 of bison or grass-fed beef)
2 cans kidney beans rinsed
2 cans diced tomatoes
1 medium yellow onion diced
1/2 cup bbq sauce
1/2 ketchup
1-2 jalapenos (optional) diced
1 T oregano
1 T chili powder
3 T liquid smoke
2 T honey

brown meat with diced onion, then drain. add meat, beans and tomatoes to crock pot. then add the rest of the ingredients. cook on medium for four hours. enjoy!

This sounds fantastic! I'm so glad you posted it! Do you have a recommendation for the best place to actually find bison? Whole Foods?

Yes, I'm wondering where to find bison as well. Also, what in the world is liquid smoke? It sounds fancy.

we get our bison at whole foods. it's fresh and grass-fed

liquid smoke gives food a smokey flavor and is awesome for cooking. you'll love it. we also get this at whole foods. it's all natural.

It's not often we see bison at the market, though I always keep my eyes peeled -- a treat when we can find it! I bet my fiancée would take this chili one step further by skipping the liquid smoke, and instead smoking the bison in our smoker outside, then shredding it. Sounds excellent to me!

I love the onion topping in the picture - I need to try that. We've also made it with venison or if you can't find that or bison, we've used ground beef as well (just make sure it's super lean).
