zucchini pasta

these days it seems like i have very little time, but i always have time to eat! we've been eating super clean this week after last week's debauchery. i wanted to try a few new recipes and this is by far my favorite. perfect meal for a cold night when you want comfort food!

zucchini pasta
based on this recipe

you will need:
two tomatoes
four cloves garlic
two zucchinis
6 T pesto
dried chili pepper flakes to taste
1/4 cup olive oil
pinch sea salt

method:
heat up olive oil over medium in a large skillet.
chop tomatoes making sure to get all of the seeds out (creates less water). add tomatoes to the oil. mince four cloves of garlic and add them, along with the pesto.
slice zucchini in to very thin slices to resemble "noodles." if you have a mandolin or a spiral slicer, those will come in handy.
add zucchini to the skillet and sprinkle with sea salt and chili flakes. stir occasionally until the zucchini begins to soften and look like noodles. i like mine finished off with a little sriracha. shocker.

Ummm, I've actually never had zucchini pasta before. I should try it though because I'm getting a little carb crazy in this last trimester ;)

I used to make "zucchini ricotta bake" which was kinda like lasagna but with zucchini, and it was so yummy! This reminds me to do it (or something like it) again. Yum. I love veggies. And I have a spaghetti squash at home, now that I think about it!
